Collective your sausages from the Cookham Christmas Street Fayre

Unlike traditional crumbly Wensleydale, we use a slower, pre-war recipe which leads to a smooth and buttery texture. Yoredale has all the lemon yogurt acidity you would expect from a Wensleydale, with mineral, earthy tones closer to the rind.

We use unpasteurised milk, so the cheese truly reflects the ‘terroir’ of the farm. Everything from the pastures on which the cows grazed, the weather, the season and even the bacteria in the soil plays a role in determining the final flavour. The cheese is clothbound and aged in our maturing room for 3-4 months.

Serve with Christmas cake.

This Copas gin is inspired by botanicals found on & around our turkey farm in Cookham, Berkshire.

As well as the inclusion of Rosemary which grows throughout the farm and is sent with our Christmas turkeys, other botanicals include Juniper (obviously!), Coriander, Angelica, Grapefruit, Lemon, Liquorice and Grains of Paradise.

We have developed it with Griffiths Brothers in Penn and are very proud of the result.

Serve with a slice of grapefruit and a sprig of rosemary.

Due to the high oil content in our rosemary, the gin might appear cloudy but will clear when tonic is added.

This Manchego Cheese cured between 18 and 24 months in a mixed control/industrial environment and a natural cave gets Spanish denomination of “Añejo Gran Reserva”. It is elaborated with raw sheep milk, has a natural rind smeared with EVOO and is cured for the last months in the family cave.

San Marzano Il Pumo Primitivo 2022/2023

Tasting notes - An intense aroma of plum, cherry and spice, with hints of rosemary and vanilla. A full-bodied wine, yet soft and balanced, full of ripe fruit flavours in an easy drinking style. This wine pairs well with hearty dishes such as stews and roast meats.

Tasting Notes - This delightful Sauvignon Blanc opens with a bouquet of classic Marlborough aromas, featuring notes of gooseberry, cape gooseberry, grapefruit, apple, and green papaya. On the palate, you'll experience a refreshing burst of citrus alongside youthful and vibrant flavours, complemented by a backbone of acidity and fruit concentration that mirrors the enticing bouquet. Hints of basil and sage add depth, layering in more of the Marlborough story. The finish is clean and invigorating, leaving a lasting impression of minerality that echoes the coastal influence of its origin.

Our popular vineyard tours and tastings run up to twice a day on most weekends.

Our sessions are informal, informative and most of all fun! We encourage questions and discussions between the whole group and share wine experiences. The session lasts for around 2.

Start in the vineyard, to learn about the grapevine growing cycles, seasonal vineyard activities throughout the season and how we grow the very best grapes.
Explore interesting facts about the different vines, history of the vineyard and current English wine industry.
Decamp to our tasting room overlooking the beautiful vineyard for a guided tasting of our full range of 4 still and 2 sparkling wines, including our limited edition Pinot Noir Reserve Red (subject to availability). Whilst enjoying the wines, we chat about wine making techniques used in making our wines and how they may differ from other techniques used around the world.

Our Room Diffusers are made with a plant based liquid and not DPG (perfumers alcohol), therefore they do not evaporate nearly as quickly and have an average life span of between 8-10 weeks. Once your Room Diffuser is finished, please do not discard your bottle – simply wash out with soapy water and you can purchase a refill and a new set of reeds.

They come packaged in a beautiful British made luxury textured box with a solid inner liner. Inside the box you will find your Diffuser bottle, your seven grey reeds along with your Care Card.

The packaging can be re-used too, the label can be peeled off and the Diffuser box can be re-used ~ they make great packaging for small bottles of wine or champagne.
