Les Caves de Pyrene Ukraine Appeal - Fundraising Auction
Read more ...Les Caves de Pyrene is a UK wine importer and distributor, and we are working closely with our Ukrainian importer in Kyiv and our winemaking contacts across Europe to help relocate families fleeing the conflict. With the kind generosity of our European friends who have offered accommodation either in their homes or in lodgings usually reserved for seasonal workers and tourism, we are working hard to coordinate provision of as many safe havens as we can.
With accommodation in place, our attentions are now firmly set on raising the
much needed funds to cover the logistical elements of relocating these families
to safety and, for those who have been left with nothing, to support them as
they work to rebuild their lives. A number of families have already been safely rehoused but there is still plenty more we can do.
This online auction will culminate in a live auction event on Monday 9th May, at Galvin La Chapelle, tickets for which can be purchased here. All proceeds of the auction and associated dinner will go directly to support this project
We are so grateful to our customers, suppliers and friends for their kind and significant support of this project. Without your assistance and generosity, the work we are doing would not be possible.

Véronique Hupin and Michael Marler’s Les Pervenches are pioneers of biodynamic/organic winegrowing in Quebec - a most serious boundary region of viticulture - and lead the way with Chardonnay production. “Le Couchant,” which means “the sunset,” is the top white wine of this estate, and probably one of the most highly regarded wines of Canada. From some of the oldest Chardonnay vines in Quebec, improbably planted in this border region in 1992 – which is sort of unfathomable if you really think about it - it is stony and citrussy with a touch of cream. Very mineral and taut with nice depth and able to age really well, too.

1 Magnum x Rozas 1º Cru 2019
1 Magnum x El Tamboril Tinto 2016
Both mags signed by Dani Landi and Fernando Garcia, owners and winemakers at Comando G.
Dani Landi and Fernando Garcia met in 2005 while at university where they forged their friendship based on a mutual passion: making first-rate Garnacha wines which capture and express the terroir of the unique plots where the grapes are grown.
Although there are some who affectionately call them the ‘enochalados’ (‘crazy oenologists’), in reality, they are carrying out the very serious task of searching
for old-vine vineyards planted with the Garnacha grape variety in the Sierra de Gredos, located between the provinces of Madrid and Ávila. There are three hectares of old Garnacha vines spread out among the villages of Cadalso de los Vidrios and Rozas de Puerto Real, near the Sierra de Gredos mountains, on granite soil and at an altitude of between 900 and 1,000 metres. Garnacha in this form, pale, fresh and mineral, is Spain’s great red grape and bears a resemblance to Pinot Noir.

Cava like no other, this special bottle, from the acclaimed Cava house of Recaredo, has been signed by all three generations of the Mata Family.
A blend of Macabeu and Xarel-lo, Josep Mata Capellades first created this fine cuvee in 1962, with the aim of conveying the delicateness and subtle complexity that a cava can achieve following a very long ageing. Faithful to this idea, the wine stays on its own lees for at least 9 and a half years, before careful disgorgement by hand. The result is an extraordinary wine that represents the Mediterranean in its purest form - think hawthorn, almond blossom, sweet hay, fennel, warm earth and green herbs.

Gut Oggau is a 14Ha wine estate located in the province of Burgenland. The estate is run by Eduard Tscheppe and his wife Stephanie who set up home in the old 17th century winery in 2007. Their philosophy seeps into everything they do. “It’s not just about the grapes or the soil, the plants or the juice, it’s not just about our vineyards - it’s about everything - it’s about the cosmos, Mother Earth, the people working on the land, the animals, the farming - it’s everything."
Each bottle features a portrait of a fictional family member, evoking the personality of the wine and the terroir from which it derives. "Timotheus's second wife and Winifred's stepmother, Josephine is an easy-going and somewhat voluptuous lady who first found the love of her life at a slightly older age. Shaped by her tempestuous youth, she is an unconventional type that radiates vitality and enjoys life to the full."

Federico Scarzello is the third generation to make wine at his family’s estate in Barolo, taking over in 2001. Since then he has gone from strength to strength, and has been tipped as one of Barolo’s rising stars for his respect for traditional winemaking combined with an utter dedication to quality. Winemaking at Scarzello is very much in the tradtional style. Fermentations are long – in some vintages over 50 days on the skins – and the wines are given extended ageing in large old oak casks and bottle.
In practice, this means that Scarzello wines are released a year or so later than others. The wines display texture and finesse, and a subtle power that demands attention.

Domaine Rolet is an emblematic estate located in the Jura and extends over the four Jura appellations: Arbois, Château-Chalon, Côtes du Jura and Etoile, spread over 65 hectares. The estate was created in 1942 by Désiré Rolet, then taken over in 1958 by his children, Eliane, Bernard, Guy and Pierre who joined him. The vineyard then developed in the communes of Voiteur, then Passenans and finally Etoile. The vines are planted on beautiful hillsides, sometimes with steep slopes making the soil difficult to work.

1 x MAGNUM Envinate Benje Blanco 2020
1 x MAGNUM Envinate Migan 2020
Envínate (aka wine-yourself) is one of Spain's most exciting new producers. The brainchild of four friends who met while studying oenology at the University of Miguel Hernández in Alicante, they focus on exploring the ancient, Atlantic-influenced terruños of Ribeira Sacra, The Canary Islands and Almansa. Their philosophy is simple: let each parcel fully express itself through traditional farming and wine-making methods.
- Benje Blanco is 100% Listan Blanco from small plots on the volcanic slopes of Tenerife and has racy acidity and a zipply olive brine palate.
- Migan is an ethereal expression of Listan Negro from two separate parcels in the Orovata Valley, where vines are over 100 years old. Feather light, yet incredibly long, this is something very special, not to be missed.

Named after the single vineyard where the grapes are grown, this wine has an extraordinary balance of power and elegance, showing both tension and fluidity on the palate. It comes from one of the oldest plots in the village of La Aguilera found at 890 meters in altitude on sand and limestone soils that give it a special personality and a chalky texture. The full clusters fermented with indigenous yeasts in concrete vats and the wine went through seven months of a slow malolactic fermentation in oak barrels where it completed an élevage of 31 months. This is one of the finest wines they have produced at this domaine and among the greatest in Ribera del Duero... full of Ribera character, serious but with a hedonistic side.

A testament to the belief that even young vines can produce exceptional wines when grown in the perfect location.
This is an incredibly pure expression of Malbec that despite coming from vines only planted in 2013, has incredible precision and finesse. Aged and fermented exclusively in used barriques, the focus is on purity of fruit and developing a sense of place, without any hint of over-ripeness.
A stunning wine from Argentina's most exciting and forward thinking winery.
Very limited quantities available.

Meaning 'hilltop farm' in the local Piedmontese dialect, 460 Casina Bric is the most elevated property in the village of Barolo at an altitude of 460 meters. After more than twenty years tending the family vineyards, Gianluca Viberti plucked up the courage to create an independent project in 2010. In this unique microcosm, he tends ten hectares, including plots in prized vineyards of Bricco del Viole and San Ponzo.

The Cavallotto family claims sole ownership of the beautiful Bricco Boschis cru in the Castiglione Falletto district (also
home to Azelia), where they have been growing Nebbiolo since 1929 and bottling their own wine since 1948. These richly
structured wines place emphasis on elegance and longevity, attributable to excellent vineyards in the Bricco Boschis and
Vignolo crus and traditional long maturation periods in large Slovenian-oak casks.

Giusto Occhipinti started the COS winery with two classmates back in the early
1980s. On a shoestring budget, the three friends vinified the grapes from their parents’ vineyards. They even bought Angelo Gaja’s used French barrels back in 1983 to age the wine. By the late 1980s, they started buying new barriques and felt the influence of California’s Napa Valley. Other winemakers in the area were impressed with the results and also began making Cerasuolo di Vittoria, using the two local varieties instead of selling the grape juice from overripe Nero d’Avola. We then tried some of our earliest bottlings, those matured in used barriques, and we were shocked at the difference. With its mineral notes and earthy sensations, the wine was so much more interesting than the later vintages matured in new oak with sensations of vanilla and toast. Just as everyone else in the mid-1990s invested in new French barriques, we began recycling ours. Since then the journey has taken them away from oak to cement and finally into amphora in order to obtain the most aromatic expression of the wines.

1 x JEROBOAM Le Pergole Torte, Montevertine 2017
Le Pergole Torte is one of those rare wines that sparkles with incredible charm. It is authentic and one of the gems of Tuscany – a landscape that is not without its share of treasures.
Montevertine is a small Chianti estate of eleven hectares, first planted in 1967 by Sergio Manetti assisted by legendary oenologist Giulio Gambelli.
By 1981 Manetti was finding the DOC Chianti too restrictive (producers were not allowed to use 100% Sangiovese and were required to blend in white grape varieties), so he decided instead to produce a premium Tuscan wine that he hoped would convey the terroir of his site, particularly with Sangiovese. Thus, he withdrew from the Chianti Consorzio, and Le Pergole Torte Vino da Tavola was born. Today, his son Martino remains committed to developing Montevertine following his father’s recipe: 100% Sangiovese grapes, harvested late, fermented in cement tanks without temperature control,
macerated on skins for 25 days, then matured in Slavonian oak for 18 months with a further six in French allier barriques.

"The 2004 Brunello di Montalcino is a powerful, muscular wine endowed with plenty of dark fruit, minerals, spices and French oak. The balance here is exceptional, as everything is in the right place. Firm yet silky tannins frame the finish with a classy elegance that is tough to find in Montalcino. Suggestions of smoke, earthiness, tar and leather linger on the long, powerful close. Ideally this Brunello needs a few years of bottle age for all of the elements to meld together, but it is already clearly a very special wine. Pian dell’Orino's 2004 Brunello saw an incredible seven weeks of fermentation on the skins, followed by a whopping 40 months in oak, equal parts cask and medium-size barrels. Anticipated maturity: 2012-2024." - 94/100 - Antonio Galloni - Robert Parker's Wine Advocate

Boscareto is Ferdinando’s flagship Barolo single vineyard and it is located in Serralunga d’Alba at the foot of Giacomo Conterno’s Cascina Francia. So a combination of fruit selected from the best performing and oldest vines, a south-west facing aspect and high proportion of sand over blue marne bedrock gives a sweetly fragrant, luxuriant mouthfeel and juicy strawberry-like overtone wine; a profound wine not be underestimated.
Ferdinando Principiano is based on the southern fringe of the Barolo zone, and benefits from the biodiversity of the Alta Langhe wilderness that lies beyond the dense planting of Nebbiolo vineyards. This helps in maintaining balance in the vineyard. In 2003 he moved away from conventional production and since then he’s been rewarded by the purity and drinkability of his wines. He uses wild yeast fermentation and organic methods, as well as minimising the sulphur used.

1 x IMPERIAL (6L) Chateau Haut-Brion Premier Grand Cru Classe 1995
1 x IMPERIAL (6L) Chateau Haut-Brion Premier Grand Cru Classe 1995
One of the four original 1st Growths in the 1855 classification (along with Lafite, Margaux and Latour) Haut-Brion has always ranked as one of the most desirable wines in the world. Its story, since 1855, has been quite incredible including a series of disasters that plagued the vineyards during the second half of the 19th century and occupation by German forces during WWII. In fact, during the war, Haut Brion served as a rest home for Luftwaffe pilots. Owned by the Dillon family since 1934, the style of Haut-Brion has changed over the years. During the '50s and early '60s the wines were rich, earthy and almost sweet, giving way to a much leaner, simplistic style of claret from 1966 to 1974. Since 1975 we have witnessed a return to the richer more complex style which many people know and love today. Haut Brion is stylistically unique amongst the 1st Growths and has always been very much the connoisseurs choice, often undervalued when compared to its illustrious piers in Pauillac and Margaux. The credit must duly be given the incredible work carried out by Jean Delmas who administered Haut Brion from 1961-2003, producing some of the greatest wines in living memory. His son, Jean-Philippe Delmas, has since picked up the baton and continues to carry on with his father's great work; beginning with the astonishing 2005, Haut Brion have hardly put a foot wrong achieving multiple 100-point scores from across the leading critics.

The Ochota story began in 2000, Taras and Amber Ochota had been travelling around some of the world’s best wine and surf regions, and decided they wanted to make premium wines back home in South Australia. The initial plan was to concentrate on Grenache in Mclaren Vale and Syrah in the Barossa Valley, find exceptional old vineyard sites in each region and create juicy, small batch, single vineyard wines. They now also farm some interesting older plots in the Adelaide Hills, with old bush vines producing small berries and low yields.
Taras Ochota died suddenly in 2020. He was a huge talent, a friend to many and will be sorely missed. His wife Amber and the Ochota team are continuing the project.

The Bretons (the perfect name for Cabernet Franc specialists) are based just north of Restigné. Their philosophy stems, in their own words, from a love of the land. The vineyards see ultra-intense organic care, no mean feat in this northerly clime; they avoid chemical fertilisers and weedkillers, restrict yields to something like 40-45 hl/ha (although some cuvées are below 35 hl/ha) and harvest by hand.

If you think that Cahors is just brushing your teeth with tannin-flavoured twigjuice, think again! Pascal Verhaeghe has been the driving force behind the Cahors “Quality Charter” and quality oozes from these wines.

Paul-Henri Thillardon first settled in Chénas in 2008, and because it was one of the overlooked appellations in the Beaujolais, he was able to find great vineyards that no one else wanted. Additionally, there were no well-known producers in
the appellation, so it was a bit of a blank slate. Having jokingly established his “homestead farm” in the “wild west” of Chénas, Paul-Henri was soon joined by his brother, Charles, and sister, Aude, and now the Thillardon clan is fully entrenched in Chénas. Today, the family farms 14 hectares in Chénas and Moulin-à-Vent and is committed to sound environmental practices like replanting hedges around their vineyards to protect biodiversity, as well as keeping a variety of animals on the farm just behind the winery.

Gérard Tremblay and his wife, Hélène, oversee a domain that they inherited in a line of five generations, but which they have mostly built themselves. With 80 acres of vines under production, most of them in the best Premier Cru and Grand Cru appellations, their list of Chablis is among the most prestigious in the region. Tremblay is known locally as an accomplished wine maker. He is justly famous for his ability to draw out the typicity of distinct appellations, underlining the terroir of his vines vintage after vintage.

Apricity is the latest restaurant from multi-award-winning chef owner Chantelle Nicholson and her team. Symbolising regeneration, rejuvenation, generosity, and light, Apricity is a restaurant with a purpose - to create a ‘sustainable’ community. We’re a group of thinkers, makers, and doers, rethinking the operation and ethos of a restaurant. Our aim is to not only meet acceptable levels of responsibility towards sustainability, but to work hard to find best practice and to share these learnings. We’re committed to moving towards a circular economy and whilst we know that there is no silver bullet, we are constantly redesigning and transitioning to improve.
Apricity is a low waste operation. We have consciously reconsidered everything we do from displaying the menu, how we take orders, how we wash the dishes and who supplies us. British produce is championed, to promote our wonderful makers, growers and farmers, and to ensure flavour is paramount, as well as reducing our outputs.

Following enormous success on the 2017 series of BBC2's Great British Menu, in which her starter made it all the way to the Wimbledon banquet, she then went on to open her own restaurant, Hicce, with long term friend, Gordy McIntyre

Château Le Puy is a remarkable property that has been in the Amoreau family since 1610. This is Bordeaux with a natural twist, made traditionally from carefully farmed vineyards. It’s not polished and modern, and all the better for it.
The vineyards are on the same limestone plateau as neighbouring regions Saint-Emilion and Pomerol. They have 51 hectares of vines split across three plots, with clay/limestone the dominant soil type. Merlot is the key red variety here, but there’s also 14% of Cabernet Sauvignon and 1% of Carménère. Whites are made from Semillon only.
Jean-Pierre, Françoise and Pascal Amoreau are the 15th generation, and farm biodynamically (certified by Demeter). In the cellar, things are old-school, and there’s no or very little added sulphur dioxide.

Long known as a blending grape, Frappato, in the hand of Arianna Occhipinti, is an extraordinary wine. Light in colour yet remarkable in complexity with notes of cherry, raspberry and white pepper, this wine shows cool climate characteristics in Sicily. 70% of the Frappato is macerated for two months on its skins, while the other 30% stays on its skins for eight months.
The fluidity, the everchanging character of this wine is truly remarkable. Every time you think you have it pinned down, it throws something else at you. Here you are smelling cherries, and in come the figs, the raisins, before a whiff of fresh-cooked strawberries runs by. Pepper? Or is that smoke? Or maybe dried leaves. Or… no, maybe more blood orange. And then there’s that floral character. A little volatile acidity is there, but it gets completely swallowed up by the swirl of aromas that keeps dancing around in the glass.

This wine is very personal to Craig and Carla at Testalonga, as the vineyard/farm belongs to the cousin of Carla's mother (Anna), and it is where she spent her early years growing up. When the vineyard was going to be pulled out to plant potatoes and rooibos tea, they asked if they could farm it to keep the connection going but also to see what kind of wine it produced as the soils are very unique and the vineyard very isolated (being on the West Coast near Elands Bay). The resulting wine was astonishing, so they decided to only produce it in magnums as a way to keep it separate from our other wines. The label is a photo taken by their good friend David Retief and “lekker” in Afrikaans means “cool” or “nice”. This is the first year it has been released to the UK market and only in magnums.

1 x MAGNUM Astro Bunny Pet Nat 2021
1 x MAGNUM Piggy Pop Pet Nat 2021
Astro Bunny is a blend of Fiano (50%), Nero d’Avola (25%), Zibibbo (25%). It’s floral, citrusy, tropical and lightly tannic all in one, with just enough fizz and acidity to clean it all up. You’ll be reaching for the second bottle in no time.
Piggy Pop is a soft explosion of cherries and liquorice spice, plus a zesty lick of natural acidity that is typical of Nero d’Avola. Quite the versatile wine, works with charcuterie, pizza, dark chocolate.
Each year Tim Wildman MW travels to South Australia to produce the wines in his bespoke Pet-Nat project. He works with sustainable growers and produces the wines in a clean, yet minimal interventionist style.

For her second book, Selin Kiazim of modern Turkish-Cypriot restaurant Oklava in London offers her readers no less than ‘the essential foundations to redefine everyday cooking’; the three building blocks of acid, texture and contrast that ‘turn good dishes into knockout dishes’.
Mimicking its title, the book is divided into three sections which encourages the reader to think about how dishes are built and how easily, with a little consideration, elements can be swapped in and out while maintaining those essentials of acid, texture and contrast. That said, you will almost certainly want to cook Kiazim’s original versions. Who could resist steamed aubergines with beef scratchings and chilli dressing; verjus cabbage with kapuska (a fragrant Turkish beef and cabbage stew) and sea vegetables, or seared bavette with smoked anchovy and gem lettuce with miso and crispy shallots?
Kiazim has a distinctive culinary voice all her own which would be enough to make Three an enticing prospect. The fact that she is generous enough to want to help her readers develop their own style makes it a must by for both young novice cooks and those who are more experienced but in search of some new inspiration.

Ti Kuan Yin (also spelled Tieguanyin) is a legendary oolong tea from the Fujian province of China. This loosely-rolled, lightly oxidised tea yields a pale-gold cup with soft, buttery texture and orchid notes that linger to reveal the leaves' complexity. As the liquor cools, a sweet finish becomes apparent and offers faint hints of honeydew melon. We highly recommend multiple steepings to fully open the hand-rolled leaves of this premium Ti Kuan Yin, whose character will seemingly evolve through three or more infusions.

1 x JEROBOAM Mas de Daumas Gassac Rouge, 2014
Often referred to as the Grand Cru of the Midi (South of France), the Mas de Daumas Gassac top-tier wines have reached international cult status. The story of Mas de Daumas Gassac is one of vision, enterprise, passion and pride. When the Guiberts first purchased their farm (the mas) in the charming Gassac valley they little realised that they had a particular micro-climate which would give them the potential to make great wines. A visiting professor from Bordeaux, one Henri Enjalbert, identified a particular red soil that was common to certain great estates in the Médoc and Grand Cru Burgundies. Under the thick garrigue scrub and shrubs covering the Arboussas hills, he found some 40 hectares of terroirs perfect for the cultivation of a potential Grand Cru.

Under the thick garrigue scrub and shrubs covering the Arboussas hills, he found some 40 hectares of terroirs perfect for the cultivation of a potential Grand Cru.

Thierry Glantenay produces exquisite, ethereal Volnay and full, powerful Pommard at his family estate. The domaine is only 7 hectares so production is small but they comprise many of the best terroirs and Thierry's talent and considered approach allows for a beautiful synthesis of pure fruit, delicate framing and a beautifully transcribed expression of terroir in each and every wine. There is a refined elegance and perfumed precision to the Glantenay wines that is very special.
This magnum, from vines planted in 1925, has been lying in The Vaults, 12th Century stone cellars in the port of Leith, Edinburgh, since being landed in the UK. Below sea level, with 1m thick granite wells, they are reputed to be the longest continually working commercial cellars in Britain. Winemakers often comment that the best bottles of their wines are housed here.

The lowly Trebbiano grape, overcropped everywhere across Italy, becomes world-quality, refined, and ageworthy in Edoardo Valentini’s (and now Francesco’s) hands in Abruzzo. The wine, best after years in a cool cellar, shows a kaleidoscope of flavours that are creamy and crisp at once, ranging from freshly toasted hazelnuts to coconut shavings, and has an underlying bracing acidity that lends it an uncanny capacity to age.

Ref. Kelley Fox:
"The Maresh bottling is one I feel very deeply entrained with each year, and more so with each vintage. These vines planted on their own roots in 1970 in both the Long Rows and my half of the Old Block I have worked in since 2008. This time spent each year working in these blocks has changed me. I have the utmost love and respect for these vines.
The Maresh 2019, slightly deeper in colour than the Mirabai, is a light-medium, youthful and noble blue-red that is full of light-flickering transparency. It is certainly lighter in colour and more subtle in the attack than that my 2018. And this is how it is beautifully disarming. Of course, the nose is full of Hood strawberries with the freshness of rain and the Pacific Ocean in the spring air, along with spices and other delicious notes that are ineffable. This silk-winged Maresh has a long finish, and for the first time ever, I accidentally drank most of the bottle writing the first draft of these notes."
Appellation: Dundee Hills A.V.A.
Picking Date: 6 October 2019 (the Long Rows and the Old Block, both planted on their own roots in 1970)
Barrels: neutral Burgundy barrels (228L) made from French forests
Bottling Date: 10 August 2020
Alcohol: 12.5 %
Whole Cluster: 30%
Cases Produced: 213 cases

NOTE: NOT rosé!
Some damage to box and label due to age.
Exact volume of bottle is not marked on the label so could be 70cl or 75cl. However, the level of the wine today remains good, at high shoulder/just below the neck.
The Massandra winery was originally built for Tsar Nicolas II in 1894 who wanted a winery to produce fine wine specifically for his royal palaces. Following the Russian revolution and his execution, Stalin (then General Secretary) ordered all the wine from the palaces to be brought back to the Massandra winery. In 1918 the winery became nationalised and later state protected under the USSR. Just before the Nazis invaded and occupied the Crimea in 1942, Stalin personally ordered the entire Massandra Collection of fine wine to be packed up on horse and cart and sent to Georgia for safekeeping. He later ordered the return of the wines back to the winery after the war. Extreme and dramatic efforts during such a turbulent time indicates the value the Russian government placed on these wines.
Even in modern times, the winery remains at the centre of political events in Russia and the Ukraine. Following the collapse of the USSR and the independence of the Ukraine, Russia stopped trading with the winery, which was by far its largest market. In Russia, Massandra is the third most recognised brand in Russia. Facing bankruptcy, and desperate to pay its 4500 workers following the collapse of the Soviet Union in the mid nineties, for the first time in its history, Massandra sold some of its finest wines to collectors in the West.
Ref. Wink Lorch: The Massandra Collection refers to a unique collection of mainly sweet and fortified wines from what was originally the Tsar’s vineyard in the Crimea. Built into the cliff-side, the huge and valuable cellar, which held significant quantities of each wine produced from every vintage back to the 1880s, was protected through the Russian Revolution and later by Stalin and beyond. Eventually in the Gorbachev era in the late 1980s, they decided to put some of the collection up for sale.
The wine is packed in its original carton and is wrapped in torn cellophane. It was part of a case purchased at Sotheby’s first auction dedicated to the Massandra Collection in 1990, stored initially in a cellar and then in a Eurocave. David Molyneux-Berry MW, then director of Sotheby’s, had spent several days in the Massandra cellars tasting through the massive lots and arranged for the bottles to be re-corked and packed individually in cartons before shipping and staging this auction, the first of several over subsequent years.
Rose Muscat refers to a pinkish clone of the Muscat variety. Unlike many in the collection, I don’t believe this is fortified and has quite low alcohol.
I have tasted several bottles from the case over the years and sold a few.
One was tasted in 2009 with a group of fellow wine professionals. “The wine stunned us all with its liveliness, persistence and its general deliciousness. It’s a credit to the staying power of the wine and to the restraint of our friends, that I was able to re-taste it the following day and write the following detailed note. The colour was of a bronzy-gold with a hint of pink in the middle. The nose revealed an incredible melding of maple syrup, toffee and caramel with some simple perfume (was it rosewater?). On the palate it was sweet but not cloying, light in alcohol but rich with an exquisitely creamy honeyed texture. The acidity was pretty imperceptible though there was an almost sweet appley freshness that came through on the finish, which made me almost beg for the next sip.”

Includes:
• 1 x 50cl Garden Swift gin
• 1 x 50cl Hart & Dart mulberry barrel aged gin
• 1 x 37.5cl Raspberry Eau de Vie 2018 - This was the first Raspberry Eau de
Vie vintage ever produced in the UK and is just one of 87 bottles
• 1 x 37.5cl Bacchus Grape Eau de Vie 2019
• 1 x 37.5cl Damson Eau de Vie 2019
Barney Wilczak, the brains and passion behind Capreolus, had a former career as a photo-journalist focusing on conservation stories, wherein he supplied non-profit media to conservationists in over 118 countries. He decided to return
home, took his interest and knowledge of the natural world, particularly botany, and applied it to distilling, working with natural biological processes. His deep and detailed research and obsessive focus have resulted in the distillation of eaux de vie that must rank as some of the most exquisite and profound to be found anywhere. Barney began by installing a distillery in the cottage where he grew up and converted a lean-to greenhouse with its frame of timber and Cotswold stone, to house a very special custom copper still.
Individual varieties of fruits are only distilled in years where the quality reaches the necessary levels. Timing is the key:
harvesting the fruit at optimum ripeness is paramount. Barney is on constant alert and told us that he has had to cut short
holidays and return home in order to be present in person to receive the crates of special fruits. Most is supplied by farmers
and friends, but some is foraged for (elderberries, for example) – or “scrumped,” as we like to say.
Each ingredient is inspected, and sorted by hand, gently washed and slowly fermented at cool temperatures to best preserve its aromatics. Yeasts, either wild or alternatively expressive cultivars, are used for the conversion of sugars to create the small yield of alcohol that helps carry and preserve the fragrance in the glass.

When bidding on an auction item, if you enter more than the minimum increment for an item then your bid will be used for proxy bidding. This is how it works:
1. You enter the absolute maximum that you are willing to bid for an item.
2. jumblebee places a bid on your behalf, using the minimum amount required to make you the highest bidder, i.e. current bid price plus bid increment OR the reserve price, if there is one and it can be covered by your proxy bid.
3. jumblebee continues to bid on your behalf, whenever you are outbid by another member's bid, until your maximum bid is exceeded or the auction is won.
4. jumblebee will notify you by email if your maximum bid is outbid by another member and provided the auction is still running, you will then have a chance to enter a new maximum bid if you wish.
For example:
The current bid on an auction item is £100. The minimum increment is £10. You enter a bid of £150 (your maximum bid).
Using your bid, but increasing only by the minimum increment, jumblebee sets the current bid to £110.
Another person bids £130 but they are immediately outbid by jumblebee bidding on your behalf and the current bid goes up to £140.
The auction finishes and you have won the auction item at a price of £140.
